United States

Nicholas Lodge is one of the top instructors in the current generation of sugarcraft artists. The author of numerous books, Nicholas teaches and demonstrates his unique skills around the world. Over the years his teaching tours have taken him to twenty-six different countries, and has introduced sugar art into unlikely places such as India, China and Fiji. He is internationally known, not only for his unique skills in sugar art, but also for the quality of his demonstrations and classes, at which he inspires enthusiasm in everyone who attends. This reputation has also involved him in judging sugar art events around the globe.
Nicholas was born in Essex, near London, England, and became interested in cookery and cake decorating at an early age. Nicholas can remember designing his first cake at the early age of ten for his parents anniversary. On leaving school, Nicholas worked in a bakery as a cake decorator to gain practical experience and commercial speed in decorating. He then was offered a position at The National Bakery School of England, located in London. Here he completed a two year course in cake decorating and design. After gaining distinctions in all his assignments and examinations, he received the award for the most outstanding cake decorating student.

Moving rapidly to even higher achievements, Nicholas became Principal Wedding Cake Designer at Woodnutts, located in Brighton, one of England’s top sugar art schools. Here he made cakes for large London hotel’s, including Claridges, The Ritz and the Savoy.

After eighteen months, at the age of twenty-one, Nicholas became the tutorial manager at Mary Ford’s School in Bournemouth, another top sugar art school. During this time, Nicholas was commissioned to do work for England’s Royal Family and other celebrities. This included one of the official wedding cakes for Lady Diana and Prince Charles. This Royal wedding cake was also reproduced by Nicholas in Japan for the visit of the Prince and Princes of Wales, during their official visit in Tokyo. Nicholas also worked on cakes for the Queen Mother and Prince William.

Nicholas was commissioned to write his first book in 1985, and as his reputation increased, additional books followed. Currently Nicholas has authored and co-authored over a dozen books and has acted as a consultant to several publishers and overseeing books written by others.

Nicholas has also been involved with CelCakes, located in York, England and has co-authored with Margaret Ford on the instructional module, “SugarFacts,” and also six video tapes, as well as teaching with Margaret at the CelCakes summer schools and roadshows.

In 1993 Nicholas received an invitation from The White House to participate in a Presidential appointment on internal affairs. This appointment would have resulted in many trips to Washington D.C. and the White House, covering a period of one year. Unfortunately, due to his previous teaching commitments, he was not able to accept this invitation from President Clinton’s office.

Nicholas was nominated, voted and approved for “Who’s Who In America” in 1994 and was voted into the International Cake Exploration Societe (ICES) Hall of Fame in 2001, being the youngest person to receive this honor.

In November, 2003 Nicholas was guest pastry chef at the EPCOT Food and Wine Festival held at The Walt Disney World Resort in Orlando, Florida. Over 800 guests, dignitaries and national media representative were able to taste the cake Nicholas created for the event.

The International School of Sugar and Confectionary Arts, teaches all levels and aspects of sugar art, cake decorating and cold porcelain. The International Sugar Art Collection, is the division that manufactures and distributes over 400 specialized tools and equipment use in creating sugar art and cakes. The school, offices and product distribution are located in Norcross, Georgia, just a few miles north of Atlanta, which has been home for Nicholas since 1991.

As well as the school in Atlanta, Nicholas also has a sister school in Tokyo, Japan, and he spends his year teaching and traveling between the two locations, as well as special classes held at other schools throughout the United States and around the world.

The International Sugar Art Collection, (ISAC), was founded in 1992 by Nicholas and his business partner Scott Ewing.

Australia

Michelle Smith is the owner of Cake Craze based in Newcastle, Australia. She is a trained, experienced, and full-time professional cake decorator. Furthermore, she is also an International teacher/ instructor, International cake show judge, and cake show competitor at the same time.

After completing the full course, and numerous other classes taught by international and well-known Australian cake artists and pastry chefs, Michelle completed her Masters in Cake Decorating, and was offered an Internship, followed by a working role at Planet Cake.

Michelle has a passion for all things Weddings, which led her to specialise in wedding cakes. Michelle has also developed a range of cake decorating stencils over the past five years (Cake Craze Stencils), and became a sponsor of the Oklahoma State Sugar Art Show (OSSAS) in 2014.  Michelle was a guest judge at the OSSAS in 2015, 2017 & 2018, invited by organiser and Australian cake matriarch, Kerry Vincent, also entering the Grand Wedding competition in 2017 (Bronze award) & 2018 (Silver award, and 13th place).

United Kingdom

Multi award-winning Cake Artist, Rosie Dummer, AKA Rosie Cake Diva, is currently starring in Channel 4’s Extreme Cake Makers. She has been featured in numerous magazines and was the winner of the Cake Masters Wedding Cake of the Year Award in 2012.

She has since gone on to present the Cake Masters Magazine Awards at the star-studded event held at the NEC Birmingham for the past four years.

Now a regular on TV and Radio, Rosie presents on BBC Radio Lancashire, has presented her own TV show on The Craft Channel and works closely with the UK’s major trade shows including Cake International and The Cake and Bake Show.

United Kingdom

Dawn Butler is the name behind Dinkydoodle Designs (UK).

In 2010 she turned her hobby of making cakes for friends and family into a small home business. Dawn found a passion for novelty cakes and soon become recognised worldwide for her realistic cakes and most of all, her amazing airbrushing skills.

In 2012 The Dinkydoodle airbrush and colour range were born, and these quickly received worldwide acclaim being regarded as some of the best products in the cake industry. Always striving to push the boundaries of cake art in 2014 Dawn launched her invention CakeFrame. This was the first time the world had seen a food grade purpose made internal structural support system for cakes, that was not only simple to use but easy on the pocket too.

2016 saw Dawn crowned CakeMasters Cake Artist of the year, an internationally critically acclaimed award, which recognised not only her talents but also her relentless efforts to share her passion and skills with others across the globe in her classes and tutorials.

In 2017 she was further recognised as one of the UK’s Top 10 cake artists by Cake Masters Magazine. She has also made cakes for the Royalty.

7 years on and the Business is going strength to strength as Dawn continues to be a pioneer in the cake world, she is now able to bring cakes to life – literally, and will soon be launching the first ever moving cake kits.

United Kingdom

Molly Robbins has been making cakes for the past 9 years. Trained as a special effects makeup artist, she is synonymous for her sculpted, realistic animal designs that have won her 3 Gold medals at Cake International. She is an airbrush specialist and always likes to inject humour and fun into her pieces wherever possible, as well as making realistic textures and colours. Molly is best known for her work in hit Channel 4 series Extreme Cake Makers, where she can be seen making anything from a life-size cow to a giant pizza, all edible and made entirely of cake! Molly launched her own range of products – Molly’s Creature Creator – in April, a 3D mould system that can be transformed into countless animal and character cakes, along with step by step tutorials using various cake decorating techniques to take the stress, complexity and wastage away from sculpted cakes.

My name is Elizabeth Marek. I have always been an artist but I got my start in the professional world by first going to graphic design school and becoming an Art Director at an ad agency. I really hated the work and would come home every day so stressed with my back hurting. I used to calm down by watching Ace of Cakes on Food Network every night when it hit me, maybe I could make cakes just like Duff and sell them to people who actually wanted a cool piece of art at their celebration!

So, I quit my job! It was a crazy first couple of years, working multiple jobs, trying to drum up cake orders and meet with clients in between working at Great Harvest as a pastry baker, churning out cakes at Safeway in the bakery department and learning as much as I possibly could (this was way before YouTube, anyone remember flickr?)

Anyway, fast forward 7-8 years and here we are, I had a successful career as a cake decorator, became one of the top wedding cake artists in the Portland, OR area and won a ton of awards. So what’s next? Well, I’m currently working on teaching and competing at cake shows. I love to teach in person classes, and I really enjoy meeting other cake decorators and interacting with them.

While I can’t meet everyone or teach everywhere, I do have an online cake school where I make amazing cakes and then break down how to make them into easier steps. My school is called Sugar Geek Show, and I put up about 2 cake tutorials every month.

One of the things I learned as a cake decorator working on wedding cakes all the time was that often when I needed to learn something, I’d buy a tutorial and it would only teach me one step of the process that I actually needed to know, or I’d learn how to do something 1 way but not in the way I actually needed to use it, so I thought, “What if instead of having to buy Craftsy tutorials one at a time I just make my school have a monthly membership for about the price of one of those Craftsy tutorials when they are on sale, and then you could have access to every tutorial on the site, kind of like Netflix?” So, that’s what we did, you can have access to over 100 tutorials on our website all for the price of about 1 Craftsy tutorial when they are 50% off (and when are they not?) that way if you’re ever in a bind and NEED to learn something at 2am for a cake that’s failing, you don’t also have to cough up a ton of extra money to learn it. 🙂

Isabel has loved cooking and pastry since she was a child. She studied Cinema and Psychology, but by a twist of fate a bakery offered her a job where she was able to improve in traditional and creative pastry.

Once she discovered modeling chocolate and fondant, at that very moment, these amazing materials opened a world of possibilities. Soon after, she immediately fell in love with making bust cakes.

A year ago, she created Tartas Imposibles, and now is teaching classes all over Spain, as well as participating in some shows. Isabel is always learning new techniques and loves being part of all collaborations around the world. And with each new project, she always approaches it with a fresh outlook and as a great challenge!

Verusca Walker is a Brazilian born artist living in Australia for the past 20 years.

With a background in Fine Art and Bakery studies, Verusca loves to mix mediums to create amazing edible cakes/art.

She is well known for her colourful and sparkly cakes and for 3D designs that appear very life-like and defy gravity.

Her work as been featured in numerous magazines, TV, radio and websites.

With 10 year career and over 100,000 followers on social media, Verusca Walker always makes sure to connect with her followers and help with tips, tricks and feedback.

She was the winner of LifeStyle Food Cake Challenge 2014

The Artist and lead architect of the 2014 life size wedding Cake Chapel featured at the Melbourne Cake Bake & Sweet Show 2014 (where a couple won a competition to be married inside it!

She won many awards including

Barbara Regini is a master of art degree in 2001
She attended several specialization courses in sculpture, molding and decoration of medieval pottery.
She enrolled at the Accademia di Belle Arti in Brera address decoration and sculpture.

Evolving approaches SugarArt in 2011 and immediately falls in love with this sugar paste, that material can able to combine all forms of Art and Design.
Modelling explores the technique of moving toward a style that combines art and Sugar reinterpreting it with irony. She loves to give of the hidden meanings to his creations. Freeze a precise moment that winds between the floors, like a photograph.
She teaches courses at various levels of specialization schools in the area, fairs and events dedicated.
She takes part in Jury in several national and international competitions (Italian Cake Festival, Sigep Rimini International Pastry and Cake decorating Cup, Expo Sweet Poland, Sri Lanka Shaky Cake International and more).
She participates at national exhibitions and won numerous competitions, is selected among the ten finalists in the national competition at the Glamouritaliancakes Sigep Rimini, 3rd place in Orlando Florida, Top ten international Artists at the NY Cake Show, nominated as Best Modelling at the Cake Master Awards.
She Is chosen as a sworn Competitions for National and International achieved awards for the originality of his works.

Her ceations are featured on “Italian Cuisine”, “Corriere della Sera” on the catalog Arketipo, “Donna Moderna”, “Vogue”, “Cake Master Magazine”, “Edible Master Networks” and her “monaLisa” cake is the only cake chosen in an American book that collect all the best reinterpratation of the famous paint with hundreds of famous artist.

Bulgaria

Petya Shmarova is a Sugar crafter from Bulgaria, Europe. She is an author, international teacher, demonstrator and a multiple award winner from International Cake Exhibitions. She works with Gumpaste, Cold porcelain, Royal Icing and Sugar paste, but her true love and passion is Wafer paper. She creates her Wafer paper flowers in unique style and way, being the first artist that started the realistic trend into wafer paper flowers. In 2019 she became Ambassador for FlowerPro by Nicholas Lodge . Qualified Cake International Jude since November 2019.

Her
articles have been published in the The British Sugarcraft Guild Newsletter, Cakes and Sugarcraft, Cake Decoration monthly,  American Cake Decorating Magazine. She is an accredited tutor and demonstrator for leading UK Cake Decoration Companies such as Patchwork Cutters and Knightsbridge PME.

She was invites as an International Guest Demonstrator to teach and demonstrate during some of the biggest Sugar Craft Exhibitions in Europe as – Sugar Paris, Cake and Bake – Germany, Squires Kitchen Annual Exhibitions, Cake International – UK, The Bakers Collective – India 2018
