Meet our International Judges
Nicholas Lodge is one of the top instructors in the current generation of sugarcraft artists. The author of numerous books, Nicholas teaches and demonstrates his unique skills around the world. Over the years his teaching tours have taken him to twenty-six different countries, and has introduced sugar art into unlikely places such as India, China and Fiji. He is internationally known, not only for his unique skills in sugar art, but also for the quality of his demonstrations and classes, at which he inspires enthusiasm in everyone who attends. This reputation has also involved him in judging sugar art events around the globe.
Nicholas was born in Essex, near London, England, and became interested in cookery and cake decorating at an early age. Nicholas can remember designing his first cake at the early age of ten for his parents anniversary. On leaving school, Nicholas worked in a bakery as a cake decorator to gain practical experience and commercial speed in decorating. He then was offered a position at The National Bakery School of England, located in London. Here he completed a two year course in cake decorating and design. After gaining distinctions in all his assignments and examinations, he received the award for the most outstanding cake decorating student.
Moving rapidly to even higher achievements, Nicholas became Principal Wedding Cake Designer at Woodnutts, located in Brighton, one of England’s top sugar art schools. Here he made cakes for large London hotel’s, including Claridges, The Ritz and the Savoy.
After eighteen months, at the age of twenty-one, Nicholas became the tutorial manager at Mary Ford’s School in Bournemouth, another top sugar art school. During this time, Nicholas was commissioned to do work for England’s Royal Family and other celebrities. This included one of the official wedding cakes for Lady Diana and Prince Charles. This Royal wedding cake was also reproduced by Nicholas in Japan for the visit of the Prince and Princes of Wales, during their official visit in Tokyo. Nicholas also worked on cakes for the Queen Mother and Prince William.
Nicholas was commissioned to write his first book in 1985, and as his reputation increased, additional books followed. Currently Nicholas has authored and co-authored over a dozen books and has acted as a consultant to several publishers and overseeing books written by others.
Nicholas has also been involved with CelCakes, located in York, England and has co-authored with Margaret Ford on the instructional module, “SugarFacts,” and also six video tapes, as well as teaching with Margaret at the CelCakes summer schools and roadshows.
In 1993 Nicholas received an invitation from The White House to participate in a Presidential appointment on internal affairs. This appointment would have resulted in many trips to Washington D.C. and the White House, covering a period of one year. Unfortunately, due to his previous teaching commitments, he was not able to accept this invitation from President Clinton’s office.
Nicholas was nominated, voted and approved for “Who’s Who In America” in 1994 and was voted into the International Cake Exploration Societe (ICES) Hall of Fame in 2001, being the youngest person to receive this honor.
In November, 2003 Nicholas was guest pastry chef at the EPCOT Food and Wine Festival held at The Walt Disney World Resort in Orlando, Florida. Over 800 guests, dignitaries and national media representative were able to taste the cake Nicholas created for the event.
The International School of Sugar and Confectionary Arts, teaches all levels and aspects of sugar art, cake decorating and cold porcelain. The International Sugar Art Collection, is the division that manufactures and distributes over 400 specialized tools and equipment use in creating sugar art and cakes. The school, offices and product distribution are located in Norcross, Georgia, just a few miles north of Atlanta, which has been home for Nicholas since 1991.
As well as the school in Atlanta, Nicholas also has a sister school in Tokyo, Japan, and he spends his year teaching and traveling between the two locations, as well as special classes held at other schools throughout the United States and around the world.
The International Sugar Art Collection, (ISAC), was founded in 1992 by Nicholas and his business partner Scott Ewing.
Michelle Smith is the owner of Cake Craze based in Newcastle, Australia. She is a trained, experienced, and full-time professional cake decorator. Furthermore, she is also an International teacher/ instructor, International cake show judge, and cake show competitor at the same time.
After completing the full course, and numerous other classes taught by international and well-known Australian cake artists and pastry chefs, Michelle completed her Masters in Cake Decorating, and was offered an Internship, followed by a working role at Planet Cake.
Michelle has a passion for all things Weddings, which led her to specialise in wedding cakes. Michelle has also developed a range of cake decorating stencils over the past five years (Cake Craze Stencils), and became a sponsor of the Oklahoma State Sugar Art Show (OSSAS) in 2014. Michelle was a guest judge at the OSSAS in 2015, 2017 & 2018, invited by organiser and Australian cake matriarch, Kerry Vincent, also entering the Grand Wedding competition in 2017 (Bronze award) & 2018 (Silver award, and 13th place).
Multi award-winning Cake Artist, Rosie Dummer, AKA Rosie Cake Diva, is currently starring in Channel 4’s Extreme Cake Makers. She has been featured in numerous magazines and was the winner of the Cake Masters Wedding Cake of the Year Award in 2012.
She has since gone on to present the Cake Masters Magazine Awards at the star-studded event held at the NEC Birmingham for the past four years.
Now a regular on TV and Radio, Rosie presents on BBC Radio Lancashire, has presented her own TV show on The Craft Channel and works closely with the UK’s major trade shows including Cake International and The Cake and Bake Show.
Dawn Butler is the name behind Dinkydoodle Designs (UK).
In 2010 she turned her hobby of making cakes for friends and family into a small home business. Dawn found a passion for novelty cakes and soon become recognised worldwide for her realistic cakes and most of all, her amazing airbrushing skills.
In 2012 The Dinkydoodle airbrush and colour range were born, and these quickly received worldwide acclaim being regarded as some of the best products in the cake industry. Always striving to push the boundaries of cake art in 2014 Dawn launched her invention CakeFrame. This was the first time the world had seen a food grade purpose made internal structural support system for cakes, that was not only simple to use but easy on the pocket too.
2016 saw Dawn crowned CakeMasters Cake Artist of the year, an internationally critically acclaimed award, which recognised not only her talents but also her relentless efforts to share her passion and skills with others across the globe in her classes and tutorials.
In 2017 she was further recognised as one of the UK’s Top 10 cake artists by Cake Masters Magazine. She has also made cakes for the Royalty.
7 years on and the Business is going strength to strength as Dawn continues to be a pioneer in the cake world, she is now able to bring cakes to life – literally, and will soon be launching the first ever moving cake kits.
Dot Klerck is an International multi award winning cake artist, she honed her skills in art school, but taught herself the basics (and more!) of cake decoration. She lives in Wellington in the wine region of the Cape, South Africa and is married to Tobie, together they have 4 children.
Each year Dot is invited to teach at International Sugar Shows and Sugar Schools all around the world. She has traveled to more than 30 different countries teaching her unique skills in sculpture and design and continues to create her sugar sculptures in between teaching.
Dot has been featured in magazines and on television around the world including in Great Britain, USA, Brazil, France, Spain, Portugal, India, Thailand, Australia and locally.

Sidney Galpern is a Certified Professional Chocolatier, award winning Cake Designer and Sugar Artist, FIPGC Accredited International Instructor, owner of Simi Cakes & Confections, creator of Simi Pre-Cooked Crystal Clear Isomalt, a chosen member of the International Cake Designers of Excellence Team FIPGC with the International Federation of Pastry, Gelato, and Chocolate based in Milan, Italy, and a FIPGC USA Representative. She is host of “Sidney’s Sweet Adventures” on CakeFlix TV, winner of Food Network/Food Network CA/Cooking Channel’s Freak Show Cakes Flame Show with sugar artist Holly Broussard, past host of on-line TV Show, “Will Travel for Sweets”produced by the Property Brothers, Jonathan and Drew Scott, as well as a member of the Icing Images Design Team and Team Sugar Art. She graduated with honors from the prestigious Ecole Chocolat School of the Chocolate Arts. She trained with top sugar artists and chefs in New York City, London, Tokyo, Orlando, & West Palm Beach. Originally from Colombia, Camilo has lived in Brisbane for the last decade.
His career as an industrial designer and qualification as a chef has enabled Camilo to create amazing architecturally inspired designs, making the most from shapes, textures and explosions of colour.
Camilo creates edible contemporary art through his business By.Aletoso and his masterful use of buttercream and wafer paper. His incredible creations are world renowned and each is true to his mantra, “be unique”.

Prachi Dhabal Deb is an internationally award winning cake artist from Pune. She has brought justice to her art by making cakes and cookies in the most creative fashion. Her work is crisp and precise with a keen eye for detailing. She has mastered the art of creating royal-looking, luxurious bakes, which are majestic in their appeal and delicious in taste. She can be rightly called the queen of royal icing and her designs would justify the same. Taking inspiration from artistic elements from around the world, Prachi incorporates these in her designs. Her deft execution of the thin but evenly spaced strings of royal icing extension work is an epitome of perfection par excellence.
Prachi was awarded the Cake Masters Royal Icing award for the year 2019 in Birmingham whilst having being nominated for these prestigious international awards in 2017 and 2018 as well.
She specializes in Royal-Icing art and is recognized as the top artist of Royal-icing in India. Royal-icing is a difficult medium to work with and is very fragile. Though highly prestigious, having being used for decorating the cakes for the British royal family, this delicate art requires high amount of patience and skills and finds very limited commercial success worldwide. Being traditionally egg based, the popularity was not much in Indian cake industry as well. Understanding the customer base in India, she knew that to have maximum admirers of her art, she will have to make eggless cakes and royal icing, thus she came up with her own product, Vegan Royal Icing, in association with Sugarin—the same is available across popular online platforms nationally and internationally and has been a huge success.
Apart from being one of the elite group of Cake Artists across the globe, Prachi also is an Internationally acclaimed Judge for various competitions around the world.
Hi. I’m Arati Mirji, a Sugar Flower Artist from Bengaluru, India.
I create realistic and natural looking sugar flowers with edible flower paste and enjoy experimenting with materials, tools and new techniques.
In a year’s time I started getting recognition for my work in the field of sugar flowers. I was a finalist in the sugar flowers category at Cake Masters Magazine Awards for two consecutive years and went on to win the award in the third year.
The year 2018 was special. I won the highly coveted Cake Masters Magazine Awards and First Place Gold at Cake International for my display inspired by the Fireworks theme in the Sugar Flower Category.

Petya Shmarova is a Sugar crafter from Bulgaria, Europe. She is an author, international teacher, demonstrator and a multiple award winner from International Cake Exhibitions. She works with Gumpaste, Cold porcelain, Royal Icing and Sugar paste, but her true love and passion is Wafer paper. She creates her Wafer paper flowers in unique style and way, being the first artist that started the realistic trend into wafer paper flowers. In 2019 she became Ambassador for FlowerPro by Nicholas Lodge . Qualified Cake International Jude since November 2019.
Her articles have been published in the The British Sugarcraft Guild Newsletter, Cakes and Sugarcraft, Cake Decoration monthly, American Cake Decorating Magazine. She is an accredited tutor and demonstrator for leading UK Cake Decoration Companies such as Patchwork Cutters and Knightsbridge PME.

Bennett Flor-Perez is the heart and soul of Fleurs Cakes-Dubai. Raised by a single mom, she has learned to work in the family’s kitchen at a young age. She had her very first training in baking and cake production when she was in high school. She travelled to Utsonomiya, Japan as an exchange student and was given a chance to have stayed with her foster family who does traditional sugarcraft. Bennett has moved to Dubai, UAE in 2005, finished her MBA in specialized Operations Management and registered her business Fleurs Kitchen Equipment Trading LLC in 2008 and in 2013 changed to Fleurs Trading FZE specializing in cake decorating and events management.
Bennett’s exposure to the cake decorating world has honed her skills and talent in cake artistry. She has further obtained trainings with well-reputed teachers in the industry and likewise has taught students from beginners to master level, provided consultations and trainings related to cake decorating. She also has been a hosting master classes with world renowned instructors to teach and share their passion in cake decorating using the latest methods and techniques.
Her works has been featured in different cake communities and different collaborations and has won several awards in cake competitions. Her skills in isomalt sugar handling are well acknowledged by the masters in the industry especially her techniques in Isomalt Flower Art. Her fruit modelling and faux fruit cakes are one of the latest hypes in the cake world. She has created hyper-realistic fruit replicas that would blow your mind.
Laura Saporiti is an Italy based International pastry chef, cake decorator and cookie artist, with a past as Historian of art, who loves to travel the world teaching her passion, on a mission to raise the professional consciousness of the art of decorating.
Laura has had the privilege of being published in several international magazines, like Italian Pasticceria Internazionale, American Cake Central, British Cake Masters, Indian Sugar Magazine or Chinese Café&Gateaux. Throughout her career she also has had the opportunity to participate in a large array of International exhibits and has received many awards and recognitions for the quality of her work: from the first prize at the Cake Design Italian Festival(2013), to the special prize for aesthetic at the Italian Cup of Cake Design (2014), followed by a gold medal at the British Cake International Show Competition(2014), to the 2017 Rising Star award received at the Golden Tiers Awards organized by American Cake Decorating magazine and the New York Cake Show.She also won two times in a row the title of Best Italian Painting Artist in 2015 and 2016.
At the same time, her international reputation led her to be invited to judge several competition, like the Italian Cake Festival, the 2015 I’m Chef Bakery Master Championship in Shanghai, the Istanbul Cake show in Turkey and the NY Cake Show in 2016, the 2019 Indian Cakeology Fest in Mumbai. She was also appointed judge for the cookie section of the Soflo2020 competition in Miami and, after winning first place in the 3D cookie category of last year edition,.she has been invited to sit among the 2021 judge team of world famous Cookie Art Competitionby renowned American artist Julia M. Usher.
In May 2021 she has been nominated among the 50 Best Italian Pastry Chef Women of the Year by Italian professional pastry magazine Dolcesalato.

Sofia Raposo is the cake artist behind Sophia Fox Cake Designer. She is from Seixal,Portugal.
From an early age, Sofia developed a great passion for the arts. She graduated in Architecture in 2006 and has over eight years of professional experience in that field.
However, she discovered the world of creative pastry in 2012 and fell in love. Since then, she had successfully participated in national and international competitions and has been published in Cake Art Magazines.
Most recently, she won the 2019 Cake Master Award for the Category of Painted Cakes and also a gold medal award at Cake International in Birmingham.
Since 2013 she has been teaching classes of modeling, painting, contemporary textured cakes and wafer paper flowers, both in Portugal and in other countries around the world.
This led her to open the Sophia Fox Cake Art Studio six years ago in Portugal – a space dedicated to training in various styles of artistic decoration for cakes, pastries, as well as offering courses and master classes.
